1. 1 dozen sea scallops
2. 6 slices of bacon
3. 1 cup of peach bourbon or peach brandy
4. 1 tsp of Dijon mustard
5. 1 tsp of soy sauce
6. 2 green onions chopped & minced
7. 1 garlic clove chopped & minced.
8. kosher salt and freshly ground black pepper to taste
9. 12 skewers
Marinade: mix choice of liquor with Dijon mustard, soy sauce, green onion, garlic, salt & pepper.
Marinate the sea scallops for several hours prior to grilling. Refrigerate
Pan fry bacon strips slightly cooked and cut in half.
Wrap sea scallops with a half bacon strip and secure with tooth pick.
Place wrapped sea scallops on medium grill 3 to 5 minutes per side.
While grilling sea scallops brush on most of the remaining marinade.
Finished grilling place lollipop sea scallops on serving platter and brush on any leftover marinade prior to serving.
